Pear and Cranberry Torte

This is my version of a classic Marian Burros recipe.  I usually make it with plums as she suggests, but for a fall and winter torte I use the sweet and tart combination of pears and cranberries.  Obviously, it’s wonderful during the Thanksgiving and winter holidays, or a fun way to make use of the cranberries taking up valuable space in your freezer.  I love the simplicity and versatility of it, and I know you will too. The baked torte can be wrapped tightly in plastic and frozen to be enjoyed later.
